Star Butter Tea Cookies

I learned these cookies in Culinary School.  I fell in love with them.  They are not just easy to make, but you can jazz up the flavors.  I have made them as vanilla, almond, anise and chocolate and all flavors were a hit. In fact, I took the cookies a bit further and dipped half the cookie in melted chocolate.  These cookies are so easy to make, that I have taught them in a kids classes and have made them as a last minute dessert.  I even made them for my niece Rachel's Bat Mitzvah's Kiddish.  They are always a huge hit.  So, enough about these cookies, now just go make them!!

Ingredients:

  • 3/4 cup (6 ounces) (169 grams) - Butter (soften)
  • 1/3 cup + 1 Tablepsoon (3 ounces) (85 grams) - Sugar
  • 1/3 cup (1.5 ounces) (42 grams) - Confectioners Sugar (10x Sugar)
  • 1 Egg
  • 1 teaspoon - Vanilla (I substituted various flavors. Almond, Anise and as always I do Orange and all flavors were DELICIOUS! So, pick your favorite or switch it up and do multiple flavors, either way, all flavors are amazing.)
  • 2 cups (9 ounces) (250 grams) - Cake Flour (I used All-Purpose and Bread Flour and both made the cookie a bit tough.  Cake Flour made the cookie softer.  In a pinch, you can definitely use All-Purpose flour, but never Bread Flour. However, Cake Flour is the best.)

Directions:

  • In a mixing bowl using the paddle attachment or a hand mixer combine butter, sugar and confectioners sugar and cream till light and fluffy.
  • Add the egg and flavoring (vanilla, almond, anise or your flavor of choice)
  • Sift the cake flour and add the sifted cake flour into the dough mixture. (Sifting is very important for consistency and it removes all the clumps, which makes it easier to pipe the cookies.)

  • Mix till just combined.  Do not over mix.
  • Fill pipping bag, fitted with a star tip  - (Brand I use is Ateco # 826.)
  • Pipe dough through Star Tip.  Pipe for 3 seconds for each cookie.
  • The Piped Star Cookie (unbaked).
  • Place cookies in the freezer for 30 minutes.
  • Preheat oven to 325 degrees / Gas Mark 3
  • Bake at 325 for 11 minutes.  Just till lightly brown. Very lightly.
  • Melt the chocolate of your choice.  (I used bittersweet, semi-sweet and milk and all tasted amazing with this cookie.)
